Mexican Chicken Casserole

No need to be an expert chef or have a very good cooking skill to make a great tasting Mexican chicken casserole. Even who do not have a lot of time can make Mexican chicken casserole using poultry along with any number of various other ingredients. This is a perfect choice for busy families too.

It is not hard to know where to start. Just take a quick look in your refrigerator and cupboards or pantry to find a few things to use for creating a hearty Mexican chicken casserole. For having a variety of Mexican chicken casserole for lunch or dinner just  use your own personal tasting as a experiment or guide with a few new recipes.

If you like a southwestern flavor and spicy , you can use skinless and boneless chicken breasts or maybe thick if like it of course and then combine it with bell peppers, chopped onions, tomatoes, jalapenos and season with chili powder, cilantro, cumin, salt and pepper and then put pepper jack cheeses and grated cheddar on the top. You can practice your own combination as you like which is suits your own taste.

Perhaps if you like, you can use rice and noodles with chicken for making filling casseroles then add vegetables and various cheese with your choice of seasonings and herbs. For a quick and easy dinner you can combine egg noodles, cooked chicken, condensed cream of mushroom soup, frozen mixed vegetables, cheddar cheese, milk and season it with salt and black pepper to taste.

For delicious tasting chicken lasagna you can use tomato paste and chopped tomatoes mixed with large noodles, ricotta cheese, mozzarella cheese, oregano and chopped chicken. Tender and moist chicken breasts are also good in casseroles with rice, onion powder, cheddar cheese, vegetables like broccoli, spinach, corn or peas, condensed cream of chicken soup, salt and pepper.

Mexican Chicken Casserole Recipe

Ingredients:mexican chicken casserole

  • 4 slices bacon
  • 6 skinless,boneless chicken breast
  • 1 (10 oz) can condensed cream of chicken soup
  • 1 (4 oz ) jar sliced mushrooms, drained
  • 4 oz cheese, sliced
  • Salt and black pepper to taste

Directions :

  1. Cook the bacon until crispy in the frying pan then remove from the pan and drain on paper towels. Leave the drippings in the pan. Crumble the bacon and place in a bowl in the refrigerator.
  2. Fry the chicken in the bacon grease over medium heat for about 5 minutes or until light brown. Turn the chicken once halfway during cooking.
  3. Put the cooked chicken in a large  pot and top it with the drained and sliced mushrooms.
  4. Heat the condensed cream of chicken soup in a pot and then pour inside.
  5. Cover the pot and cook on the lowest heat for 4 hours.
  6. Place the slices of cheese and the crumbled bacon in the pot and cook on the high heat for 15 minutes or until the cheese has all melted.
  7. Serve the Mexican chicken casserole immediately while still hot.
