Chicken Tortilla Soup Ingredients:
- 1 large chicken breast
- 34 oz chicken broth
- 2 cups Monterey Jack cheese, shredded
- 2 tablespoons minced cilantro
- 1 can diced tomatoes with green chilies
- ½ cup chopped yellow onion
- 1 garlic clove, minced
- 8 corn tortillas
Chicken Tortilla Soup Directions:
- Simmer the chicken covered in water for about 30 minutes in a large saucepan.
- Remove chicken from the chicken broth. Add enough of the canned broth to make the needed amount of broth required. Shred chicken into the broth, then add the garlic, tomatoes and onion.
- Simmer the mixture for 20 minutes then simmer for 10 minutes longer after add the cilantro.
- To serve chicken tortilla soup, cut 1 tortilla per serving and put in the bottom of the bowl.
- Mix with the soup and sprinkle ¼ cup of the shredded cheese over the top of each bowl.
- If desired float a sprig of fresh cilantro on top of each bowl as a garnish.
